Menu Monday

A few months ago I started to lift weights. In addition to my usual exercise routine, I now do 45 minutes of strength training 4 days per week. And let me tell you, on days when I really go hard, I would kill a man just to smell the curly fries on his breath. For the first time in many, many years I am craving meat. Up until now just the *thought* of eggs made me gag and now I eat at least 2 hard boiled eggs a day. Since we eat a plant-based diet, most of my protein comes from dairy and beans. 

How can I put this delicately...eating enough beans to satisfy my new protein needs and hundreds of squats do not mix. I don't belong to a sexy LA gym, but I would like to show my face at the YMCA again. So this week I am exploring different protein sources besides the musical fruit that I love so much.

Breakfast
Waffles + PB + banana
Greek yogurt + fruit + granola
Avocado toast + cheese + egg
Egg + cheese + whole grain toast

Lunch
Sandwiches + chips
Grape & quinoa salad + feta + hummus
Smoothie + spirulina

Dinner
Quesadilla + guacamole + beans + mango
Veggie paella + olives + cheese board + grilled bread
Baked pancakes + berries + key lime smoothies
Eggplant shakshuka + bean puree + bread
Vegetable soup + chickpeas + orzo
Homemade pizza 

Snacks
Crudite
Cheese + fruit
Hard boiled eggs
Spoonful of peanut butter in the dark

  2. Me, too! They sell saffron with the bulk spices in Sprouts, so I splurged and bought $2 worth (like 8 threads)
