For years and years I have been writing in one way or another about what my family eats each week. People have always responded very well to my menu plans and I know I'm spending much less than others so there is definitely a place for Menu Monday here.
As I said in my Menu Planning Basics post, menu planning is a surefire way to save at the store. It also takes the guesswork out of what can be a very hectic time of day for most people. And! It eliminates food waste. How can one sheet of paper do all those things? It's like a magic trick. That you can eat.
Here's the menu magic we're enjoying this week:
Breakfast
Avocado toast
Milk & cereal
Smoothies
Yogurt parfait
Eggs & potatoes
Snacks
Cheese & crackers
Fruit
Crudite
Hummus & pretzels
Hardboiled eggs
Lunch
Cheese sandwiches
PB&J
Kale & sweet potato salad
Leftovers
Dinner
Chickpea piccata + garlic bread + salad
Roasted vegetables + fried polenta + red sauce
Mushroom & bean tostadas + lime slaw
Baked egg cacciatore (I added beans) + garlic toast
Chili + cornbread + chips + guacamole
Peanut noodles + edamame beans + potstickers
Homemade pizza
Dessert
Sugar cookies
Overall, this is a pretty cheap, healthy, good week. Applause all around! As I've said, we abstain from meat for ethical and health reasons. You might consider it for the financial benefits, also, since a can of beans costs about 50 cents vs more than $6 per pound for good quality meats. Eliminating it from your dinners just half the week can save you lots!
