Menu Monday
How come you're always such a fussy young man. Don't want no Captain Crunch, don't want no Raisin Bran. Well, don't you know that other kids are starving in Japan. So eat it, just eat it - Weird Al, "Eat It"
Menu planning can seem so overwhelming at first! And truly, at its heart, planning what you are going to cook to nourish yourself and your family is such a personal thing. Such an act of love. Such a giant pain in the ass.
Every Thursday night I sit down with a glass of wine and a notebook, grab the store circulars and get to circling. Then I look through all the recipes I've saved on Facebook or pinned on Pinterest, then I get to making my list. When it is all said and done I'm happy that we have a plan and I'm also a little buzzed.
What works for me might not work for you. Maybe you can only plan 3 days in advance, maybe you can do a month. Do you.
Here's what we are eating this week:
Breakfast
Cereal and milk
Yogurt parfaits
Eggs and potatoes
Avocado toast
Lunch
Cheese sandwiches and chips
Kale salad with sweet potatoes
PB&J
Leftovers
Snacks
Cheese and crackers
Crudite
Fruit
Dinner
Grilled cheese with apple + chips + pickles
Pasta + peas + garlic bread + salad
Roasted veggie tacos + pineapple + cilantro slaw + potato wedges
French toast + smoothies
Roasted grape salad + pita + hummus + olives
Asparagus risotto + salad + beans
Homemade pizza + buffalo cauliflower "wings"
Overall I was under budget this week and even bought some extra nuts and things from the bulk bins. The items on sale that influenced my plan were potatoes, asparagus, eggs, and grapes.
I'm really looking forward to the roasted grape salad. All of the recipes I'm using this week are AND some sweet free printables are all pinned on the Mind On Your Money Pinterest page, check it out!

Do you know what you're eating this week? If so, what are you most excited about?
